Before getting rid of it I saved some pieces out of a '75 Trans Am (wrecked and rotty). When I took the rearend out I discovered a "Limited Slip" tag on it. Which type of unit did these have, the locker like the 10-bolt in my '87 Suburban, or something else? Was there a more prevalent gear ratio? I haven't messed with it to try to figure out what it is.

And, this car was last on the road over 20 years ago. I may use this rearend in my '50 Chevy, which already has the same year open Camaro rear in it. Anything to look for when I open it up to change the fluid, any recommendations as to what to fill it with?

You measure the gear ratio by turning an axle 1 revolution and counting how many times the input yoke rotates.
You can use any brand non-synthetic rear gear oil for limited slip differential with a viscosity around 80W90. Also add a bottle of GM limited slip additive.
It's not a "locker" type rear.

Yeah, I've just been too lazy to stick some blocks under it so I can turn it and count. Hopefully it's a mid-3 range and not a 2.73 or 2.41 -

Depends on what engine/transmission was used best you can get is the 3.23
400 M20 3.08
400 M38 2.56
455 M21 3.23
