2001 Aztek NOT overheating but sez so

Replaced radiator, all hoses, temp sender,CAP,thermostat (195 degree) but the gauge still says runs HOT. Fans came on shortly after start up and the top hose was luke-warm. But a hand-held digital thermometer shows a high of 201 after warming up. Pressure tested cold and hot, no pressure lost, and no pressure added during the run cycle.
Since it acted up to begin with, according to my neighbor-owner (light and gauge on, she said steam but no actual over heat), what could be the problem? Does the computer need to be reset to eliminate this obvious error on the gauge, or is the gauge not right and causes other issues, like a safe-mode condition?
I have circulation and the pump appears to be OK.
Burping the radiator with a lever- active cap produces no air into the recirculation tank.
Could this be in need of bleeding??? could air pool near the sensor? That's my only thought right now. I'm stumped.

sounds like you have an inacurrate gauge if it is not really overheating but if the AC is off the fans should not come on till about 215

Tonight we opened the bleeders on the thermostat housing and the heater bypass on the head. Bled a LOT of air out of both sides, added better than a quart of anit-freeze, got it hot, bled it a few more times. The Gauge went from HOT HOT to about the middle of the gauge. Turned on the heat, it went down a bit more. Tomorrow in the daylight I will bleed it again (and add more antifreeze if necessary. I think bleeding it does the trick) My next stop was to be the pump, but there were no leaks, so I think it is okay.
Also tomorrow, bleed the brakes, since I replaced a hardline and a hose on he front. Thanks for the help!!! I hope this helps someone else.
