2004 grand am overheating periodically

My 2004 pontiac grand am is overheating periodically. This issue seems to arise when I have been driving for long periods of times. When I am driving down the highway it does not happen. I noticed it started when I was in stop and go traffic. The vehicle had water in the system and continued on home without it overheating that evening. The next day I popped the hood started it and let it idle. It never overheated while sitting there. I did notice that the fans sounded louder than the day before. Today when I drove for about two hours it never overheated but it was all highway. When I got home I kept it running popped the hood let it sit idling. Again the fans did not sound like they were as loud but it did not overheat while idling. I even kicked on the A/C to see if it would overheat and nothing. Also my heater has not worked either. It will blow semi-warm on control speed 1 but if I put it any higher it only blows cold. I have not noticed any leaking anywhere on the inside of the car and like I say it has been maintaining radiator fluid at the proper level.

So my question or questions are do you think it may be the thermostat, the electric fans, heater core, or even maybe the electric fan relay switch. I'm stumped as to where I should begin and can not reproduce the problem. I don't want to replace everything if I don't have to. Any help would be greatly appreciated.
 
Is the fluid level in the radiator full when cold? Do you see any milky white substance in the oil filler cap? Can you tell what temperature the fans start and at what temperature they shut off, this is with the A/C off. Does the engine coolant look clean or rusty?
 
No milky white substance seen in oil filler cap. Radiator fluid may be a little dirty but nothing unusual from what I can tell. The fans always seem to be on but I can't hear them as loud as I have heard them in the past. I can't really tell when they are kicking on. I know they should kick on when I turn the A/C on but don't really hear a difference when I turn the A/C on or off.
 
If the fans are always one, even with a cold engine, there is a problem. You can try correcting it by replacing the sensor to start with. You also may want to try replacing the thermostat to cure the no heat problem and make sure you leave no air in the system.

I was leaning the same way. I am gonna try replacing the sensor first and thermostat. Just wanted another opinion to make sure I was thinking the same way. Thanks for the help and will let you know how it works it out.
