I just found out that my wife's car needs new Rotors. It's a 2003 Grand Am. Is this something that is easy to do if I have a Chilton's manual or is it best left to a professional?

Hard to answer without knowing your abilities. If you find the Chiltons instructions understandable and you have the tools, go for it.
