...'99 Pontiac Sunfire? Assuming all have manual transmissions. Is the adaptor/connector/ cable end ( the part of cluster cable that joins to the computer) same for all the models?

Sunfire was one body style, if I remember correctly. Usually the same body style has interchangeable interior parts. I took a 1998 Explorer cluster and put it into a 2000 ranger same connectors. I would say that you have a 90% percent chance of this working. If I was you I would check out forums for your car, or call a Chevrolet dealership which can see what models had the same.
