Fuel/Temperature Gauge Reading Incorrectly

I have a 2003 Aztek and, on occasions, the gas gauge reads lower than it should and the temperature gauge reads higher than it should. It's an eerie feeling to look down and see your running on empty and the motor about to explode because it's running too hot. But, I know it's not true, so I ignore it as much as I can. It just bothers the snot out of me when it does it. Has anyone ever experienced this issue?
 
It could be an indication of the dash circuit board going bad.

My 2005 aztek has been having the same issue where when you first start the car at times it shows the heat gauge completely maxed and the gas is almost always a quarter of a tank off...

@melsg5 you say dash circuit board.. would that also be a culprate of my heater blowers and cooling fans not working at random? Sometimes when I hit railroad tracks or bumps everything will kick on and work well, and other times, neither my cooling fans or blowers will respond. I've replaced about every fuse and relay and checked wires to look for rodant damage or the like with no success..
