My radiator fan doesn't kick on until it's at the line right before the yellow on the temp gauge. Which I think is to high and I get afraid of it overheating so I want to hard wire it to a toggle switch and bolt/screw the switch to my dash so I can switch the fan on when needed. If I do this, what's the best path to route the wires into the cab?

why dont you just replace the temperature sensor, the fan works, the relay works, cannt image anything else but the sensor? If you want to hardwire it you have to find a rubber grommet in the firewall that you can fish the new wire through.

I already replaced the temperature sensor.

Get an IR thermometer and varify the temp. The factory gauges are iffy at best. The fans shouldn't come on till 220-230.

Mine comes on maybe around 240 unless I turn on the AC before that. I'm not really sure of the temp., I'm just guessing. And that's if the gauge is telling me an accurate temp.
