how do i properly start a 1984 firebird with a carb in the winter?

I have a V8 5.0L 1984 firebird with a carborator. The guy i bought it from showed me that if i spray starter fluid down into the intake when someone turns the key, it starts right up. That method did work for a little while, but after about 4 more startups doing it that way i tried it again and it started on fire!! How the hell does that happen and how can i start up my bird and avoid that??
 
Fix the choke and start it the way it was designed. Starting fluid is bad for the engine and dangerous to use.
 
if your choke works then you usually pump the gas pedal a few times to allow the gas to enter the carberator then stop crank.

(note) pumping the pedal and not stopping while your trying to start the engine will flood the carb.
