more pontiac grand am questions?

i have a pontiac grand am 2001 v6 and it is having some issues. What will make the water to all go out of the over flow value. We replaced the thermostat, water pump, heater core. We did a Radiator flush. All of the water drains out and over heats the car. Help me please. We have a haynes manual and a mechanic is not an option
we had the head gasket check and they said it was fine. any other reason it could be doing this

if you had the head gaskets checked and the Radiator and hoses are good and no intake leak the only other thing i can think of is the fan is not turnning on./
