I have a 2000 Pontiac Montana, just did headgaskets, new fuel pump assembly, new coolant temp sensor, new radiator and a few other misc parts. Was running great but now when I drive, all of a sudden it will just stall out... If sitting at idle it will be fine and all of a sudden just dies... When I drive around if I don't keep the throttle slightly in it will also die.

Anyone know what this could be?

go back over what you did and look for a bad connection at a sensor or injector, etc. If you have a CEL have it looked up to give you a clue where to look.

the only codes it throws is for the evaporative emissions system or something to that effect.

Check for a vacuum hose you left disconnected or a vacuum leak at intake.

did you try running it in your driveway or street for 1/2 hour or so to duplicate the stall/no restart situation? Once it stalls you could start diagnosing what the cause is rather than throwing parts at it.

Does the stall happen when it idles? Any particular weather or temperature range that this seems to be commonly occurring at?

Have you had the Intake Air Control Value (IAC) checked to see if it is it clogged up or is faulty? This is a highly probable suspect when it stalls when you're idling.
