Van overheats (says it is)

When I start up my van and drive for 5 minutes the temp stays at dead cold then all of a sudden it goes into the red zone or almost the red zone an my coolant reservoir look like its about to overflow, the level is fine when it's parked! Any ideas? Somedays it will work fine...
 
What year and miles? So it does not use any coolant,that is a very good thing. Maybe a bad thermostat ?
 
Thanks for the support steelcity, its a 2000 with 176000 Km. It doesnt take any coolant unless i bleed air, otherwise none at all, just cant figure out if i'm still getting air in it or if its stuff from when we fixed the head gasket. it has never smoked white, it had just a small leak that when it would sit for a couple hours it would spudder lo the startup. otherwise no coolant in oil, not puffing white smoke. it just says it overheats when i drive for 5 minutes. bled a good amont tonight for around ten minutes and it seems to be better (wont go right to overheat) the temp goes up about 3/4 of the way gets cold heat blowing then the gauge falls down to normal running temp and starts blowing heat as it falls, im almost positive its air in the system avoiding the flow of the coolant. im not gonna screw with it and see if it gets worse or better.

i have a new thermostat just gotta get the time to put it in, wasnt set that was the problem, could be a mix between air in the coolant and a bad thermostat.
