Weird problem need help

So here is the deal. I have an 87 GT fastback. 2.8l v-6 5 speed. I turn the car on and it warms up just fine. when it gets to operating temperature it will spontaniously shut off. if i open the hood and then open my coolant cap on the engine and let it vent some steam and fluid for just a quick few seconds then shut the cap. the car will start right back up and have no problems. whats up with this does any body have a clue? if you need more details let me know.
 
Does the engine overheat when it dies? Or does the temp gauge still show normal temp?

It could be the ECM temp sensor or you could have air in the cooling system.
To clear out air in the system, With the car cold, raise the rear of the car up.
Remove rear thermostat housing cap.
Slowly remove front radiator cap until any air in the system escapes and just fluid comes out.
Close front radiator cap.
Fill up the cooling system from the rear to the top.
Close cap.
Start engine for just a few seconds.
Remove rear cap and fill if required.
Replace cap, lower car, and then take it for a test drive.
 
Its not the thermostat. One of the first things i tried. Regarding the ECM temp sender. would that be the one on the head by the exhaust? Also the car does not over heat. Ill try the air bubble removal later today and get back to you all later. Got any other ideas???

No, That is the sender for the gauges/dash warning lights. The ECM temp sensor is on the front of the engine towards the battery. It is mounted horizontally. The sensor just above it is the fan temp switch.
