1967 LeMans Rim and tire question

I have a 1967 LeMans and I want to put some Cragar SS 15x7 or 15x8 but I don't want rubbing issues. It is a basically stock car with lots of new parts. I am shooting for that old school cool, little fatter back than front. If you have done this and you know what works please let me know. Thanks for your help in advance!
 
the 15x7 should be no problem the 15x8 depends on offset and you make no mention of what size tires you are considering?
 
I am not sure as to what tires will fit a 7 inch rim and not look stupid. I am wondering what fits. I want a meaty look that does not rub. I know this is somewhat vague and subjective. I like the 15x7 due to being able to rotate the tires better but this car won't get used as a daily driver. The tires will age out before wearing out. I don't even know what back spacing on a 15x7 will work. I don't know what tire height is close to stock so my spedo stays close. So basically I am doing research to see what I need so I can order it. I did read a post that someone put on 15x7 ( unknown back spacing) 215/65 on front and 255/60 on back and liked them. I was hoping to get this is what I did and why + it was a good/bad decision and why

You should not put a 255 tire on a 7" rim, it is too wide. Based on the link above it seems like 235 is the widest you should go without modifications.
