My 2002 Pontiac Grand Am Gt keeps overheating!

My 2002 grand am gt keeps overheating on me. The first thing we thought it could be was the thermostat. It turns out we installed it incorrectly and there ended up being a leak from the thermostat. We installed it correctly and it still had an overheating probelm. It turned out that we found another leak from the intake manifold. We replaced the intake manifold gaskets and that solved the leak but not the overheating. Long story short we have replaced the temperature sensor, both fan control relays, the radiator itself, the water pump, and the coolant reservoir tank and cap. Nothing that we have changed has stopped it from overheating. It is not a normal overheating situation though. I will turn on the car in the morning and the car will be fine. I am in sales so i drive pretty much the whole day for my job. Its usually within the first two hour window of me turning on the car my car will start to overheat. I simply pull over and turn the car off for a total of about one minute. I turn the car back on and the temperature returns to normal. The car does not overheat at all for the rest of the day. I do not add any coolant to the car. The next day this process repeats itself all over. I have no idea where to go from here. If anyone has any ideas your help will be greatly appreciated.
 
when the car overheats are the fans running? Have you used an IR gun to verify that it actually is giving you a correct temperature reading?
