Temperature Gauge goes up when I am in traffic and goes back down when driving?

2001 Pontiac Sunfire
I recently had my water pump, thermostat replaced along side with a coolant flush due to a leak, after getting my thermostat replaced I noticed that when I drive and sit in traffic my temperature gauge will go up a very little bit (few lines) so maybe to 95-97 degrees Celsius and the second I pick up speed after the red light I notice it goes back down to 90 degrees Celsius. Prior to having coolant issues, my car always just sat at 90 degrees Celsius since I got it, and would maybe go up just a line and would go back down to 90.The Car mechanic who fixed the car, said the fact that now I see my temperature rise more on the gauge this was normal for the fact that I am sitting in traffic and just to make sure It never hits the red point (Which I am not close to touching, I am just worried that if one day I will get stuck in traffic it might get worse if something is actually not working or not right)..
Does that seem accurate, or is something wrong?
Some of the posts I am reading online say its normal, some say its the thermostat, etc.. (Which Is making me a feel a bit worried because I just paid money to get all these problems fixed..)
Could it be a bad thermostat? or now because I just got a new thermostat it is more accurate?

thats normal. it's going from 194 to the low 200s
 
Normal, my Sunfire does the exact same thing, goes past 90 degrees in traffic, and have sometimes had it idling for over half an hour with it not going to the H.

Perfect thanks guys! Its normal, as long as the temp goes down...I now know!
thanks, I noticed that my fan kicked in when it got a little higher above 90.
