Trans Am cooling system question

Hello, newbie here to this forum. I recently bought a 99 Trans Am as a project car for my son and I. The previous owner purchased it from a person who was attempting to make it a street racer and lightened it up by removing a few things. Also he supposedly changed the fuel rails and throttle body to a Holley system. I dont see any Holley names on the parts. The guy said that because of this, the ecm needed to be removed and now the engine is running without it.
The question that I have is:
Without the ecm installed, the temp gauge doesnt work which also means that the electric fans dont work. So without putting an aftermarket temp gauge in to read the temp and running the fans on a switch with a relay is there a way to have the factory gauge with the fans work.

you need to wire up the temperature sender to turn on an adjustable relay based on temperature to kick on the fans. That sensor would also supply a signal to the gauge. Here are some examples.
