Trans Swap

I'm sure this topic has been covered numerous times already but I'm looking for advise on swapping out the stock Roto-Hydramatic trans on my '61 Catalina Convertible. Any suggestions on which trans to change to with the minimal amount of work and metal fabrication, etc. I have already located a supplier for the adaptor I'll need.

A Chevy TH 350-400, 4L80 or 700R4 I was told. I'm looking for the one that will require the least amount of work, especially trans tunnel metal fabrication.
