...grand am GT ? we have replaced the water pump, thermostat, fans kick in, blown motor/head gasket out of the question too, please help!?

Replace your coolant temp sensor, if problem still persists then you may have a cracked head. Normal temp is between 190-215 for the one I owned.

Generally 190-200 plus or minus a few, what is the matter that would make you ask?

Normal is between 190-220 the fans should kick in at somewhere between 220-230 or when the A/C is in the on position
if you are getting any higher than 240 and the fans are on it probably has an internal issue either a crack in the head or block or both...
have you done a pressure test of the cooling system?
and checked for any leaks in the cooling system?
Exactly what type of problem are you having?
