well you are only mentioning wheel size not what tire size you are considering. You also should be aware that in 15" tire/wheel size you are extremely limited in selection and in quality of tire. In addition the 16" category inst doing all that well either.
So I would be looking at 17" all around, 8" width is fine, 9" you have to pay more attention to available space so you have to look at back spacing and offset.
Tire size you can probably go to 245/45x17 in the front and 255/45x17 in the rear. Whatever you do you should work with a tire/wheel supplier willing to test fit your selection.

I have a 1970 Lemans and I am planning 17x9s with a 275 tire on the rears. Has anyone run that in stock fenders?

Ames Performance sells Ralley II wheels in 17x9 with a 5" backspace. I found this chart which seems to indicate it will fit.
